Happy New Year
This year started on a boat in the middle of the Tagus River.
At the last minute, we booked a New Year’s Eve cruise with Nosso Tejo to watch the Lisbon fireworks. Best impulse decision we made all week. Champagne at midnight, twelve raisins for twelve wishes, the city lighting up around us from what felt like the best seat possible.
After the fireworks, we walked home with everyone else. The Metro shut down early, buses were gridlocked, and Lisbon turned into one big slow moving crowd. Walking felt right. Our NYE dinner ended up being lighter than the carb loading party we expected so we made a stop at Amu’s for a falafel wrap and fries, then finally made it back to the apartment and called it a night. A long one. A good one.
New Year’s Day started exactly how it should. Slowly.
When we finally decided to get up and make breakfast we decided to start with a nice brunch of shakshuka and bubbles (of course). No experimenting, just a tried-and-true recipe from Crowded Kitchen that always delivers. Warm spices, rich tomato sauce, and tofu eggs for the win. Comfort food that still feels celebratory.
We didn’t leave the apartment once. Not usually our style, but it worked. Pajamas, catching up on TV, nowhere to be.
Dinner brought us back to the kitchen for Zuppa Toscana, using a recipe from Timothy over at Mississippi Vegan. Hearty, comforting, exactly what you want on the first night of the year.
The bread for both meals came from Lully’s. Literally the last loaf they had. Luck was clearly on our side.
Not a bad way to start the year. Good, healthy, clean food and nothing we had to do, but everything we wanted to do.
